Can I take pages that are not next to each other?

Yes. Write them together, like 1-3, 7, 9-10, and the new PDF holds exactly those pages in that order.

Is anything lost in the pages I extract?

No. They are copied out of the original rather than re-drawn, so the text, the images and the quality are the same as they were.

What if I want every page separately?

There is a mode for that. Each page is written as its own PDF and the set arrives as a ZIP.

Does the original change?

No. The file you opened is read only. New files are written; nothing is written back.

Name the pages you need and they come out as their own document. Write ranges the way you would in a print dialog, or ask for every page as a separate file.
